Ingredients for 4 persons

One large piece of beef ribeye
50g butter
Salt and pepper
Umami sprouts
French brioche (unsweetened)
Horseradish mousse or sour cream
Oscetra caviar

Beef Preparation:

  1. Sear the ribeye on both sides with butter, season with salt and pepper.
  2. Let it rest for 10 minutes.
  3. Cut into small pieces (appetizer-sized).
  4. Place them on the French brioche and top with Osciètre caviar.
  5. Add sour cream and umami flakes for garnish.
  6. Enjoy as an appetizer or with your fingers.

French Brioche Preparation:

It is recommended to obtain good French brioche from your local bakery, but a good homemade French brioche recipe is also recommended.
